Beauty No. 19

We have started a Youtube chanel! I got a ukulele for Christams and I am still learning, but my husband plays very well. Here is one of our first videos!

I Heard the Bells on Christmas Day

I heard the bells on Christmas day
Their old familiar carols play,
And wild and sweet the words repeat
Of peace on earth, good will to men.

I thought how, as the day had come,
The belfries of all Christendom
Had rolled along th'unbroken song
Of peace on earth, good will to men.

And in despair I bowed my head:
'There is no peace on earth, ' I said
'For hate is strong, and mocks the song
Of peace on earth, good will to men.'

Then pealed the bells more loud and deep:
'God is not dead, nor doth He sleep;
The wrong shall fail, the right prevail,
With peace on earth, good will to men.'

Till, ringing, singing on its way,
The world revolved from night to day
A voice, a chime, a chant sublime,
Of peace on earth, good will to men.

Little baby Snow Leopard Wednesday!

Today in Münster it is snowing, a lot. So I thought a good animal for today would be the snow leopard.

Here are some facts about the snow leopard:
Their feet act as natural snowshoes.
They can jump as far as 50 feet in one jump.
They can kill an animal three times their weight.
Sadly, there are only a recorded 6,000 left on the planet.

LITTLE BABY PIGLET WEDNESDAY!!!!!!!!!!!!
Considering that tomorrow is Thanksgiving I thought it only natural that our little baby animal for this Wednesday should be a little piglet! And if you eat pork on Thanksgiving, you might not want to read this post because you will probably feel some pains of guilt while eating your honey glazed ham!
I hope these little baby piglets make your Wednesday even better! My favorite one is the last one!

Here are some short videos of little piggies to distract you from what you should be doing!

Granola Covered Nuts - My Version

Lately my husband and I have been trying (trying the key word) to eat a little more healthfully. My Kitchen skills are pretty good, however my patient skills when it comes to cooking are small to none. So I like to find recipes that are relatively simple and quick and make them even more simple.

I like crunchy things. I don't know why, I just do. So when I find recipes that include or are about nuts I usually like them. This recipe is great. It is so easy and the end result is  hard to mess up! I like eating my granola covered nuts with plain yogurt and honey for breakfast or a light lunch. Here is the super simple recipe.

What you need:

2 cups of any kind of nuts you like (I find that walnuts and pecans work best because of their texture)

1 cup of granola (I actually put some raisins in mine)

2 tablespoons of brown sugar

2 egg whites

First, put your 1 cup of granola and what ever else you want in a food processor. ( I actually used a hand smoothie maker for mine). Process granola and other ingredients until the become fine but not flour like. Add the brown sugar.

Second, beat the egg whites until they are frothy

Third, fold the nuts into the egg whites. Completely cover the nuts in the egg whites.

Fourth, slowly fold the granola into the nut egg white mixture. Make sure to completely cover the nuts.

Fifth, put granola covered nuts on to baking sheet and bake at 400 degrees for 20 minutes. Make sure to check every 5 mins and to spread the nuts around.

Take out of oven and let cool on cookie sheet for about 10 mins. After that enjoy any way you choose!

Guess what? IT'S LITTLE BABY KITTEN WEDNESDAY!!!!!!!!!!!

Wednesdays are hard to get through sometimes...they are right smack dab in the middle of the week.
Therefore, I have decided to create a 'tiny' installment that might make your Wednesday a little bit brighter! It is called "Little baby (some cute little baby thing goes here) Wednesday."  Every Wednesday I will post some cute pictures of baby animals. I know it sounds silly, but it makes me smile so I am assuming someone out there will get a couple minutes of warm fuzzies out of this, so I think it is worth it! As noted above, I want to start the little baby installment with some cute kittens!

And just to distract you at work or school, here are some super cute videos of little baby kittens!

Beauty No. 9

Sometimes we pass beautiful things everyday without even noticing them.

Lately I have been noticing doors. It seems that European countries take a little more time on their front doors, it is the first impression of someone's home after all. I guess it is easy to pass up something like a door as something beautiful. We use them everyday, they become a necessary part of our lives. I think that it is interesting that the necessary things are the most overlooked when it comes to beauty, yet they are the things that really make our lives beautiful. Furniture, lighting, cutlery, electricity, windows, doors, toothbrushes, etc.... Your life would be noticeably different without one of these simple things that we take for granted every single day. These things are beautiful within themselves because they provide the canvas for extraordinary things. So next time you are looking for something beautiful in your life, take a look at something extra ordinary and maybe it will have an extraordinary impact on your day and maybe your way of thinking.

Beauty No. 8

Today was one of the first days that hasn't rained! Also, it was above 45 degrees! We had to do somehting nice outside today so we went on a bike ride and had a picnic today! It was absolutely perfect! It was about 75 degrees, the sun was shinning, and where we had our picnic there was a man playing old violin tunes. It was picture perfect!

A day of Sunshine
Henry Wadsworth Longfellow

O gift of God! O perfect day:
Whereon shall no man work, but play;
Whereon it is enough for me,
Not to be doing, but to be!

Through every fibre of my brain,
Through every nerve, through every vein,
I feel the electric thrill, the touch
Of life, that seems almost too much.

I hear the wind among the trees
Playing celestial symphonies;
I see the branches downward bent,
Like keys of some great instrument.

And over me unrolls on high
The splendid scenery of the sky,
Where though a sapphire sea the sun
Sails like a golden galleon,

Towards yonder cloud-land in the West,
Towards yonder Islands of the Blest,
Whose steep sierra far uplifts
Its craggy summits white with drifts.

Blow, winds! and waft through all the rooms
The snow-flakes of the cherry-blooms!
Blow, winds! and bend within my reach
The fiery blossoms of the peach!

O Life and Love! O happy throng
Of thoughts, whose only speech is song!
O heart of man! canst thou not be
Blithe as the air is, and as free?

Here are some of the pictures, these are my favorite ones from today!

This was our lunch! Water, Salami, Camabert, Pistachio spread, Walnut bread, and Ameretto cookies!

How to make wonderful candied almonds!

What you need:

2 cups almonds

1 cup brown sugar (white sugar works as well)

1/2 cup water

1 tea spoon cinnamon

Sauce pan

Baking sheet lined with parchment paper

Directions:

Put sugar, water and cinnamon into a sauce pan. Stir together and turn the heat on the stove to medium heat. Once the ingredients begin to boil add the 2 cups of almonds. Using a wooden spatula stir the almonds and sugar for about 8 - 10 minutes.

For the majority of the stirring process the mixture will have a liquid texture. 8 minutes into the stirring process the mixture will take on a sticky texture. Shortly after this, all liquid will dissolve and a powder will form on the almonds. Once this happens remove immediately from the pan. Place on the baking sheet lined with parchment paper.

Separate the almonds from one another and let them cool for at least 15 minutes!

Simple breakdown:

1. Sugar, water and cinnamon into sauce pan.

2. Add the almonds once mixture boils

3. Stir for 8 - 10 minutes.

4. Remove from pan onto the baking sheet once mixture becomes powdery.

5. Cool for 15 minutes before eating.

ENJOY!!!!!!!!
