Souptastic Saturday!
Tomato Basil soup with grilled cheese croutons!
This yummy soup is easy to make and it tastes so much better than soup from a can! The grilled cheese croutons are a major winner in my book! Look below for the how to!
 
 
Ingredients (Soup):
2 tablespoons olive oil
2 cans tomato puree
2 medium white onions
4 cloves of garlic
5 leaves of basil
1 cup of milk
 
Ingredients (Grilled cheese):
Four pieces of bread (any kind you want)
4 pieces of cheese (Softer cheese work the best)
 
Tools:
Skillet
5 quart pan with lid
Immersion blender
cookie sheet with baking paper
 
How to (Soup):
In a 5 quart pan heat up the olive oil. Once heated add chopped onions and garlic and cook for 10 mins. Add the Tomato puree and milk. Let heat for about 2 mins. Add chopped basil and then blend with the blender till the mixture is extremely smooth. Let stay on stove with lid coverd on Low for 10 mins.
 
 How to (Grilled cheese croutons):
Make grilled cheese on skillet. Transfer the grilled cheese to the cookie sheet lined with baking paper and cut into one inch cubes. Cook in the stove at 350 degrees for 10 mins. Take out and enjoy! Serve on the side or in the soup!

Carrot, potato curry soup!
 
 
 
 
One of my favorite things to do is experiment with food. I love it when I put a bunch of food together in a pot and it comes out tasting wonderful. It's like a surprise at the end!
This wonderful soup is perfect for the fridgid weather here in Münster! My husband and I were walking home from the library and it was just sooo cold. I think it's funny that German people (in my limited experience) walk or bike everywhere - at least in Münster - and they don't plow the walkways, bikeways or roads! It is really funny to watch people try to ride their bikes in 8 inches of snow! Anywho, here is my recipe for carrot, potato curry soup! Enjoy!
 
Ingredients:
4 large raw carrots
4 large yellow potatoes
1 large yellow onion
1 cup green onion
3 cups veggabtle stock
1 1/2 cup of milk (I used fat free, but I bet whole milk would taste great!)
8 cloves of roasted garlic
2 tablespoons of ground curry
Salt to taste
1/4 heavy whipping cream for the top
 
Tools:
Cutting board
Large bowl
large pot
strainer
Immersion blender (I am sure a hand mixer will work fine, just make sure not to splash everywhere)
ramakin for garlic
 
The how to:
Turn the oven on to 350 and on bake.
Pour vegatable stock into the large pot. Begin to boil. Cover with lid.
Cut all of your veggies into very small pieces. I cut them into about half inch pieces.
Put veggies into boiling stock and cover with lid.
While veggies are boiling put the garlic into the ramekin. Place into the oven for 10 mins.
After the veggies have softened drain the excess liquid into the bowl through strainer.
Once the veggies are seperated from the liquid add garlic and begin to blend with the blender. Little by little add the milk. Once it becomes mashed potato like conscitency add the curry. If needed add more milk and if the soup mixture is too thick, add veggatalbe stock one ladle at a time.   
 
I like to eat this soup with a little thicker texture, however it tastes just as good if it is a little soupy ;)
 
I also like to put a tiny bit of heavy whipping cream on top and garnish it with either chives or basil!

Granola Covered Nuts - My Version

Lately my husband and I have been trying (trying the key word) to eat a little more healthfully. My Kitchen skills are pretty good, however my patient skills when it comes to cooking are small to none. So I like to find recipes that are relatively simple and quick and make them even more simple.

I like crunchy things. I don't know why, I just do. So when I find recipes that include or are about nuts I usually like them. This recipe is great. It is so easy and the end result is  hard to mess up! I like eating my granola covered nuts with plain yogurt and honey for breakfast or a light lunch. Here is the super simple recipe.

What you need:

2 cups of any kind of nuts you like (I find that walnuts and pecans work best because of their texture)

1 cup of granola (I actually put some raisins in mine)

2 tablespoons of brown sugar

2 egg whites

First, put your 1 cup of granola and what ever else you want in a food processor. ( I actually used a hand smoothie maker for mine). Process granola and other ingredients until the become fine but not flour like. Add the brown sugar.

Second, beat the egg whites until they are frothy

Third, fold the nuts into the egg whites. Completely cover the nuts in the egg whites.

Fourth, slowly fold the granola into the nut egg white mixture. Make sure to completely cover the nuts.

Fifth, put granola covered nuts on to baking sheet and bake at 400 degrees for 20 minutes. Make sure to check every 5 mins and to spread the nuts around.

Take out of oven and let cool on cookie sheet for about 10 mins. After that enjoy any way you choose!
